Here are a few of the basic tools that you want to have on hand when preparing delicious vegan food.
Two sharp knives: one for chopping and a smaller one for paring.
Two wooden bread boards: one to chop onions, shallots, garlic etc, and the other one for everything else. (My sister was not a fan of me cutting watermelon on my one bread board, because it ended up tasting of onions.)
A good potato peeler: it needs to fit your hand well, and stay sharp and firm when peeling.
A 6 or 8 quart Instant Pot: if you really get into this vegan creative cooking, you'll also want a smaller 3 quart Instant Pot.
A George Foreman's Grill: this is the best I've found, but a similar grill type when get you by.
