Stuffy Peppers

Deliciously sweet. Ingredients: 1/2 cup quinoa 1 cup water 1 tsp vegan beef bullion Combine water, bullion and quinoa in a pan. Bring to a boil and then simmer it covered for 15 minutes. 2 red peppers, cut lengthwise in half 1 small Vidalia onion diced 1/2 cup Beyond Beef Crumble Fiesta or 1/2 cup black beans 1 tsp olive oil 1/4 cup salsa

vegan shredded cheese, Violife mature cheddar cheese melts to perfection Sauté the onion in the olive oil, add the crumbles or the beans. Combine the quinoa with the salsa, then mix it all together. Stuff the pepper halves with this mixture. Sprinkle the cheese on top .Place the peppers on a baking pan and put them in a preheated oven at 400 degrees for 25 to 30 minutes.


Serves 2 Protein 12 grams per serving
