Infamous Chili

This is my signature chili. Always requested when I need to bring a dish. Vegan or not, this chili is a hit.
Ingredients:
1 TBSP olive oil
1 med. onion chopped
4 cloves garlic diced
2 hot peppers (your choice) chopped
1 cup vegan beef broth
1 cup corn
1 1/2 cups homemade black beans
1 can fire roasted diced tomatoes
3/4 cup quinoa
1 tsp chili powder
1 tsp cumin
1 tsp sugar
1 tsp chili flakes
Pepper to taste
Cook this in a pot on the stove. As soon as the oil is ready to sizzle put the onions in for 1 minute, followed by the garlic for another minute and then the chilies for about 3 minutes. Add all the other ingredients. Simmer medium low for about 25 mins, until quinoa is done, it looks curly. Add more water if it's too thick.
Serves 5-6
Protein 6 grams per serving
Tips: I make it hotter for those that like their food spicy and mild for those that prefer that. It can be served with vegan cheese, onions and Fritos, or made into a modified 6 way: spaghetti, chili, mustard, cheese, onions and hot sauce.
