Chocolate Chip Cookies GF

Got to love them


Ingredients

1 1/2 cups flour, your choice (I like almond and oat flour equally divided)

1 1/2 tsp. salt

1/2 tsp. baking soda

1/2 tsp. baking powder

1/2 cup coconut oil

1/4 cup packed brown sugar or Xylitol

1/3 cup maple syrup

1 to 2 tbsp. vanilla extract

water if needed

3/4 cup vegan chocolate chips

1/3 cup of walnuts (optional)

Preheat oven to 350, line baking sheets with parchment paper.

Combine flour, salt, baking soda and baking powder in a small bowl.

Mix coconut oil, brown sugar or Xylitol and the maple syrup in a lager bowl until well blended. Add vanilla extract. Blend in the flour mixture adding a little water if needed. Add chocolate chips, walnuts if desired. Put on baking sheets and bake until brown, 8 to 12 mins. Tips:You can roll up cookie size balls and put them in the freezer on a cookie pan. When frozen put them in a freezer bag and use when you want to enjoy a hot chocolate cookie or two.
